Then sugar is added and melts into warm khoya for a sweet, creamy base that pulls clean from the pan. Cardamom powder is thrown in and mixed through for a gentle spice aroma that lifts the rich milk. Finely chopped almonds and pistachios are even folded in for crunchy bits in dense centers. A touch of ghee kneads the warm dough for smooth binding and slight shining. The mix is shaped into flat rounds with very smooth edges pressed firmly by hand. Each penda is showing pale cream color from pure milk solids with nut flecks dotting the matte surface. The inside is staying moist and milky while the surface is holding a firm, perfect texture. This follows the Mathura temple sweet style, where khoya is the main body without grains that are rough.
