Shreeji Dairy Bombay Ice Halwa has a unique method of making its product through various stages. To cook a mixture of cornflour and milk, sugar and ghee are added over low heat till the mixture is thick and glossy. The workers spread this thick, glossy mixture on the greased sheets in a thin layer. Between the three layers, they put cardamom powder and slivers of almonds and pistachios. A final layer of ghee is brushed over the rolls to give them a shine before they are cooled to a firm state and cut into neat squares. The translucent sheets allow the nut pieces to be seen through faintly. Also, this resembles Mumbai street recipes where constant stirring ensures a smooth paste without any lumps. Each square contains stacked layers that do not cling together at cuts.
Storage Instructions:
