Authentic Heritage & Story

Ingredients:
  • Ingredients: Rice, Semolina, Black Gram Dal, Sugar, Salt, Refined Wheat Flour, Raising Agent (INS 500 II), Acidity Regulator (INS 296)
  • RECIPE STEP 1: Blend 4 tbsp (60 ml) fresh or sour curd, 3 tbsp (45 ml) ,Edible Vegetable Oil, 1% cup (265 ml) water approx. and add it to 200 g of Khatta Dhokla Mix, stirring well to a lump-free smooth batter. Suggestion: For Spicy Khatta Dhokla, add 2-3 tsp of ginger and green chilli paste to the batter STEP 2: Pour the batter into a baking tray greased with oil. Sprinkle red chilli powder or black pepper powder on the batter if desired and steam on high flame for 12-15 minutes. STEP 3: Remove the trays. Sprinkle little water on Dhokla and cool for 2-3 minutes. Now remove the Dhokla carefully from the tray and cut into cubes of desired size.
  • Seasoning: Heat 2 tbsp (30 ml) oil, add 1 tsp mustard seeds, a pinch of asafoetida, sesame seeds and a few curry leaves. Put off the flame, add 4 tbsp (60 ml) water, pinch of salt and sugar to the seasoning and mix well. Spread the seasoning evenly on the Khatta Dhokla and garnish with chopped coriander leaves.
  • Serve with Imli (Tamarind) chutney and coriander chutney, mint chutney or even coconut chutney.
  • Tip: If a pressure cooker is used for steaming Khatta Dhokla, do not use a whistle.
