Kubal Kokam features dried rinds from the Garcinia indica fruit, known as kokum or amsul in Maharashtra. These small purple fruits grow on trees along India's west coast. After picking, workers remove the pulp, sun-dry the tough outer skins until they wrinkle and darken to purple-black. Each piece stays whole, light, and leathery with a subtle fruity scent. The dried form holds its shape well in the pack. Folks abroad soak it for sol kadhi or add to fish and veg gravies. Pieces soften in warm water and release a purple tint to liquids. Storage Instructions:
Kubal Kokam should be placed in a cool and dry spot where there is no sunlight or moisture. It is recommended to use sealed glass or plastic containers that are airtight. How to Use:
Take 4-6 pieces of Kubal Kokam and put them in a small bowl filled with warm water for 10-15 minutes to soften them. Besides the softened pieces, also use soaking water during the cooking of curries, dals, or fish dishes. For drinks like sol kadhi, blend soaked kokam with coconut milk, garlic, and green chillies, then strain. Use 2-3 pieces in chutneys or rice by simmering with spices. Shelf life reaches 12-18 months from pack date when stored dry.
