Authentic Heritage & Story
Conscious Food's Kokum or Garcinia Indica comes in small deep purple rind slices, dried and made from the fruit's skin. The slices, when submerged in water, emit a sharp vinegar-like juice. The overall flavor is a mixture of sour cranberries and very little sugar. The slices dissolve quickly in hot liquid and blacken their color evenly. The color of the preparation turns pink in soaking or gravy. The first sensation is bright acidity, then the sweetness of berries mellows down. The remaining part of the rind is very thin and leathery with no bit of the pit. It goes well with rasam or sambhar or as a base for drinks.
From the hot steep comes a fruity sour aroma. Full-sized pieces of the dried are left in a steady thin-water-bloom over the time of steeping. Lightness and nuttiness are already hinted at the end of the dry toast. The tongue feels the clean tang for quite a while, which is soft. The blend carries sour power from one piece to another. The steaming smells and sharpness of citric are at their highest. The thick wrinkled skin remains the base profile. The slices swim briefly and then sink when soaked. The overall tone is of the taste of the rind that has just become wet and very fresh. The juice leaves a very deep stain on the spoon touch. The heat takes out the purple core very slowly. The pairing leads to the layers of sour and spicy flavors.

Brand Details
Conscious Food procures kokum directly from the farmers of the Konkan region. It dries the fruit skins in small batches, thus ensuring peak tartness. Then, the rinds are packed for the stability of the home shelf. It provides a complete range of souring agents, like kokum, tamarind. It connects the coastal pickers closely for a clean and pure supply chain. Nevertheless, it is always concentrated on regional dried fruit basics.
