Baidyanath Cow Ghee is produced using fresh milk coming from cows that are allowed to feed naturally. The milk is collected by the workers and is left standing for a while, so that the cream comes to the surface. The cream is then skimmed off and turned into butter by churning with the help of simple wooden instruments. The next step is to melt the butter on a low flame in the open pots. Water gets evaporated and the milk solids also get browned and sink down as the butter simmers. The golden fat that is clear, is the one that floats on top. They carry it through fine cloth to make sure that all bits are removed and that it is cooled down. This cooling down would be the reason for it being in a soft, semi-solid state at room temperature.
The ghee has a light yellow tint and a faintly nutty scent, which is the effect of the slow cooking. The ghee has no water, proteins, or other materials left in it. It is very easy to melt when it is warm and it becomes solid when it is cold. This primary clarified butter form is suitable for many kitchen usages from stirring into dal to topping chapati. The process follows steps that were passed down for a clean result every batch.
