Almond House Coconut Kalakand is a very good Indian sweet that combines the rich creaminess of the milk with the freshly grated coconut flavor. The production of this classical dessert takes a long time as milk is cooked slowly until it thickens and then sugar is mixed with grated coconut. The mixture is made aromatic with cardamom thus creating a subtle and fragrant touch which enhances the overall sweetness. The resulting kalakand has a fine, crumbly texture that smoothly dissolves in the mouth which is why it is very much loved during festivals and celebrations.
The making of coconut kalakand runs through the lines of curdling fresh milk to obtain chenna (paneer), which then gets crumbled and melted together with desiccated coconut and sugar at the same time. The mixture is stirred very gently over a low heat till it sets the perfect thickness. The mixing is then poured into a tray, decorated with finely chopped nuts or coconut flakes and left to cool and harden into square blocks.
