Almond House Boondi Pak is one of the most popular Indian sweets with a very pleasing flavour combining crunchy little fried gram flour, (besan) balls soaked in rich and sweet syrup prepared with either jaggery or sugar, and mixed dry fruits and aromatic spices. Each tiny, crispy boondi is made by deep-frying the gram flour batter which is first seasoned until it becomes golden and crunchy. After that, these fried balls are added to a hot and very sweet syrup containing cardamom and chopped almonds and pistachios that gives every nibble a perfect mix of sweetness and crunch. The whole lot is then formed into a hard, moist ball, or compressed into a block, and finally cut into little pieces for easy serving.
This sweet is mostly shared among people and consumed during festivals and celebrations or as dessert. It has an inviting crispy-like outside, soft on the inside texture, with an added richness of nuts and a blast of cardamom in the background, that renders the whole thing an authentic and very satisfying taste experience.
