Almond House Bellam Gavvalu is a classic Indian dessert of the South, which is made by molding a dough of refined flour into tiny delicate shell shapes, then frying them to a golden crispy crust. The small, golden shells are then lavishly drenched in a thick syrup made of jaggery and cardamom, which is an inviting combination of the crispiness and the rich sweetness of the two. The use of the natural jaggery imparts a wholesome taste to the sweets which is further complemented by the cardamom's warm aroma that does not overpower the natural flavors. 

 

Origins of the treats can be traced back to South India, where they are, or at least used to be, mainly prepared during big festival times like Sankranti when they were brought to the festival and shared as a depiction of celebration and tradition. Its crispy bite and sugary coating make it an invite and a nostalgic delicacy that is loved by all.
