Almond House Bellam Dry Fruit Pootharekulu is a heavenly, light, and traditional dessert from Andhra Pradesh, which is typically known for its very thin layers (almost like paper) made from rice starch and filled with a sweet mixture of jaggery (kol), ghee, and assorted dry fruits like cashews, almonds, and pistachios. The term "Pootharekulu" literally translates to "coated sheets" in Telugu, which indeed describes the dessert perfectly - very thin, translucent rice sheets do the coating around the rich, sweet filling.

 

The whole process of making the dessert starts with soaking and washing raw rice, then grinding it to a very fine powder, and finally the batter is very carefully cooked on a smooth, hot surface (traditionally an inverted clay pot or tawa) to make paper-thin rice sheets. These very thin sheets of rice are delicately picked up and spread with melted ghee, sugar, cardamom, and a mixture of finely chopped nuts. The rice sheets are then rolled and either formed into cylindrical shapes or turned into small bundles. The final product is a light, flaky, and melt-in-the-mouth sweet infused with the natural sweetness of jaggery and creaminess of the dried fruits.

 

Because of its unusual texture and taste this sweet has become very popular with people celebrating festivals, marriages, and other occasions. The use of bellam (jaggery) instead of white sugar gives the sweet an earthy kind of sweetness and traditional touch which make it a real regional delicacy.
