Almond House Badusha is an absolute masterpiece in India, characterized by its multilayered structure that melts in the mouth and is drenched in sugar syrup, giving it that pleasant sweet taste. The procedure involves the preparation of skin (dough,) mixing flour (maida), ghee, curds, and baking soda, till it becomes soft, and then resting it for a while to get the dough very flaky.
Re-rolling the dough into small balls with a little dent in the middle, they are then fried in hot oil till brown and crispy on the outside, while the inside is left soft.
After that, the fried pieces are steeped in warm sugar syrup that has been infused with sweet-smelling cardamom and a trace of saffron. This process not only leaves the Badusha with a subtle sweetness but also a potent fragrance of the syrup. One also has to be extra careful when making the syrup, as it has to be just right to cover the sweets evenly, not too sticky or wet. The war between the flakiness of the crust and the moistness of the inside has thus led to the emergence of a distinctive texture that has contributed to the popularity of Badusha as a sweet during festivals and special occasions.
