Authentic Heritage & Story
Dnv Sambar Masala is a combination of spices for sambar, which is the thick stew made of lentils, drumsticks, carrots, and other vegetables. The mix is composed of the sourness of tamarind, the warmth of coriander, and the earthiness of fenugreek, which adds the pot together. During simmering, the blend plays its role, as it not only helps in making the dish flavorful but also gives a uniform gravy by coating the ingredients. You can use it to prepare the traditional tangy dish with toor dal base, different vegetables, and a small amount of tamarind water.
The masala can be either thin or thick, as it can withstand prolonged stove cooking. It has its origin in Tamil or Andhra, where red chillies are used along with milder seeds to create an all-around accessible flavor. If vegetables like brinjal or okra are used, they will be fully flavored with the spices, while the lentils will thicken the dish naturally. It can be eaten along with breakfast or a full meal, and the stew will be still very tasty because of the reheating. The mix will be integrated without any separation, and thus can be served in small or large portions. It can be reached in case sambar is one of the dishes to be served at the table.
