Jaggery softly spreads its molten form all over the piece, giving it a firm grip. Cardamom is very mild here, but it still manages to fill each slab with its aroma. The hard outer layer of the chikki is in perfect contrast with the interiors that happen to be soft nuts. The reason for the bright shade is pure jaggery, which was slowly caramelised over low heat.
