The bees transform the nectar of flowers into this golden liquid, and no changes at all are made in the process – no heating or any other step in between. It comes out thickly with a very mild smell that varies slightly from season to season and according to the kinds of flowers visited by the bees. The raw honey is obtained from the most trustworthy regions, after which it is placed into containers where the air bubbles rise up naturally for a clear flow. The very small parts of the pollen are retained in the product as proof that the product is really from the hive.
Keep the jar in a cool, dry place, and make sure to close it well after each use to prevent heat and moisture from getting in. During the winter, place the jar in hot water to make pouring easier. Traditional methods involve first locating the hives, then using light smoke to calm the bees, and finally, carefully draining the combs without damaging them. Most of the wax is left behind as the honey drips out. No filters are used that would take away the good parts, so the entire essence of the hive gets into the jar. When sealed tightly, it will remain unaffected by moisture and thus be a reliable source for a long time.
